Southern Oven Fried Chicken

I got this recipe out of one of my weight watchers cookbook. My family loved it.

Southern Oven Fried Chicken
1/2 cup fat free buttermilk
1/2 cup cornflakes, crushed
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 pounds chicken parts, skinned
4 teaspoon canola oil

1.Preheat oven to 400. Spray large baking sheet with nonstick cooking spray.
2. Pour buttermilk into large shallow bowl. On a sheet of wax paper combine cornflake crumbs,flour,salt, and pepper. Dip chicken in the buttermilk, then dredge in cornflake mixture,coating completely. Place the chicken on the baking sheet: drizzle with oil. Bake 30 minutes, then turn chicken over. Bake until cooked through,15 to 20 minutes longer. 6 points plus
I did change this recipe a little. I lowered the temp. to 375. I also made double of the cornflake mixture. This may change the point plus value.

Today is a busy day for me. We have school to do. I have to clean sometime soon or I may get lost in the mess! (lol). We have errands such as flute, lessons, piano, library, tutor and youth group today. I try to do most of my running on Wed. and Thurs. because I like to be home all day on Mondays, Tuesdays, and Fridays. I think it's important to have days at home for my sanity.

On another note the picture above is of my new great nephew Jonsel. He was born in Nov. Cute isn't he?? Have a great Wednesday.

weight watcher for the new year.

Today was my first weight watcher weigh in of the New Year. I gained about 5 pounds over the holidays. I decided to get back in the swing of things. Hopefully next week there will be a loss. Weight loss has been a battle for me for years. I refuse to give up though. Today's meeting we talked about believing in ourselves and key things to do for success. Wish me well as I continue in this journey.

I know my last post was back in Nov. We have been busy. We had a wonderful Thanksgiving. Angel and I have been busy with choir practice. Our Christmas musical will be on Dec. 18. We have lots of plans for Christmas such as ,cookie baking days,going to see a live nativity, a field trip, going to different Christmas services at church, and having lots of family over. We have been busy decorating for Christmas. The kids love doing this. Here are a few pictures.

We finally got our baby chickens. They are sooo cute! We plan on butchering this batch. We will order another batch for layers later. My kids are loving them. I keep reminding them that they are a source of food. We have had some friends stop by to see them. I never knew what an attraction we have in the chicks. I allowed the kids to name them. Some of the names are Barbecue, Fried, Baked, Omelet, and Roaster. The chicks have brought excitement to our house!

Happenings at Tracy's corner

We have been busy lately. We are doing school,co-op ,piano and flute lessons, library visits, tutor sessions and cleaning the house of course. I've been trying to get the family to eat right and save money on groceries. I've been trying to make things from scratch. We had a week of illness too. We are finally healthly. Praise the Lord. I plan on posting more often and catching up on blogs too. I've been doing something different lately. I've been checking out blogs that follow different faiths from the christian faith. I've been learning what they believe and why. I comment occasionally and share what I believe. Most people are very nice even if we don't agree. I hope this will lead to friendship where I can present the gospel. Of course it's up to them what they do with it. Tonight we are going treat or treating. Extra special brownies

This is a delish recipe a treat for those of us on weight watchers.
1 13X9 inch brownie mix
1 16 oz bag of chocolate chips
1 7 oz ctn. marshmallow fluff
1 c peanut butter
3 c rice krispies
Bake brownies in a 13 x9 in. pan according to directions. Let cool. Turn out onto cookie sheet. In saucepan, combine chocolate chips,peanut butter and rice krispies. Heat until chocolate chips are melted. Spread marshmallow cream on cooled brownies and top with chocolate chip mixture. Refrigerate. Cut into bite size pieces and serve. Take about 20 minutes. I cut these into 20 squares. They were 9 Pt's plus value for my weight watcher friends. Enjoy!

week in review

This week went great for me. We are enjoying the fall weather. Last Saturday my darling hubby and I celebrated our wedding anniversary. (17 years) My mom watched the kiddos. We went to Red Lobster and had a fabulous meal. Then we went window shopping at a bunch of stores and the mall. We talked a lot. We felt like a couple and not just mom and dad.
Sunday, my niece had her baby shower. It was really nice and the family actually behaved like grown up for a change. Angel also sang in the children's choir and played the bells in the bell choir. I love when the kiddos do this.
Today I had my weight watchers meeting. We talked about managing your environment. I lost 3.4 pounds which is great. I had been struggling lately and had gained about 7 pounds back. I'm back on track and feeling good about it. I hope you have a great week.

Sept. a stessed out month.

Sept. was a very event filled month for our family. We had 3 Birthdays. We had major flooding in our area. Our basement had 4ft. of water and so did our garage. My in-laws came up for a week and helped us with clean up. They were a blessing!! We started the new home school year and co-op. I have a new position within the co-op. I open the church, set it up and make sure we leave the church ready for Sunday morning. I've been working more lately. We had a major family crisis in my extended family. Jason and I had to take a stand in which my sister has disowned me. It has to do with the sister and her divorce or not to divorce issues. My mother has not been thrilled with our stand too. I have 3 other sibling who took this stand too. Our family is divided on this issue. I can't really share on the blog but the situation has changed since my last post about my sister. I'm working less in Oct. and hope to get our life back to normal. Whew I think that was everything.

Bunnies

Angel and I got new bunnies. Our family just loves animals. We got them at a local farmer's market. It was so fun to pick them out. We had fun shopping for bunny supplies. The first two pictures are Angle's bunny. She named it Annie!

We weathered the hurricane Irene quite well in my neck of the woods. We had some flooding. A road or two were closed down. We also had branches all over the place. My in-laws stayed in Delaware. They had no major problems. Jason and I were very worried about them. The picture below is of the pasture behind our back yard. Cows are usually grazing there. The other pictures of branches down. Tomorrow my hubby and I are going to the local farmers market to buy chickens!! Any advice I know some of you ladies are experienced in this area. Angel has also talked me into getting a bunny or two. I guess since we are renting our farmhouse we need to start homesteading on a small scale. I'm sure I would have pictures tomorrow!

1st Day of school

Today was our first official day of school. It went very well. We are getting back to a full schedule. We have about 10 days besides for easy schooling done in the summer. In the house we are living in now has a little alcove off the living room. Which is now our classroom. The only thing I want to do is get rid of the table and buy desks for the kiddos. I hope this will prevent bickering. Here are pictures of the new classroom.

Vacation pictures post 1

We went to visit my in-laws in Delaware for vacation. We went to the beach two of the days we were there. Jason went fishing with his dad and brother. We went to a baseball game in Maryland and to the Cape May zoo in New Jersey. We also just hung out with my hubby's parents.

Justis was surprised by this guy.

She found tons of shells like this. She didn't keep any because some little creature lived there. I'll post our trip to Cape May the next post.

visit to e-care

I was planning on posting about our trip to Delaware,but life got in the way. My children had a friend over and they decided to use the slip and slide. The friend's mom and I were enjoy each other company too. My son comes up to me saying Angel is hurt. I followed him. There she was with blood all over her face. She fell on her face while playing. She was missing a chunk of her lip. I thought stitches might be needed. Off we went to our local hospital. The took us fairly quick. Angel didn't get stitches. The doctor said they couldn't put them there because it wouldn't work. If it was any place else she would have got them. Our instruction were soft food, ice and ibuprofen. What a night!! My mind is numb and I'm tired. To much stress on this mom! Have a better night then I did. lol.

Day trip- Lake Tobias

We went to Lake Tobias it's a zoo. They have a reptile building and show. They also have a safari. Where you drive in an open air bus for a up close veiw of the aniamls. We got to feed them too. They also had a petting zoo. We did this as the first day of school. Justis was away on a mission trip so,I decided to do something special with Angel.

We had a great time . I would tell anyone to go there for a visit.

Missing in action

I know, I have not posted for a while. I'm dropping by to say hi! The last month and a half has been extremely busy. We've moved and that has taken up all my time. We are renting a farmhouse. We are excited because we will have a huge garden,be able to have chickens, and pigs. I like the fact that we basically have no neighbors. Our family has had some horrible neighbors with lots of problems at our old house. I love the peacefulness here. I'm also excited because we have room for my in-laws when they come up from Delaware! I hope to post some pictures of the farmhouse in the near future.
In other news, my weight lost journey goes on. I've lost 29 pounds so far.
Our school year has ended well. Our evaluator was impressed with our portfolios and the children's progress.
I hope to catch up with all your blogs. Which means I have a lot of reading to do!

I worked this weekend. I had a good weekend over all. The weather made things difficult. I work on a dementia unit. We had tornado warnings this weekend. Which means we had to follow emergency procedures. It was hard because we couldn't explain to our residents what was going on. The residents don't respond well to situations like this well. Praise God. No tornadoes came our way. After the warning was over we got things back to normal. How was your weekend??

I've been doing weight watchers for a couple of months now. I'm learning about eating healthy and exercise. I really am feeling better. I have lost 25 pounds and dropped a clothing size. I would highly recommend this program if you want to lose weight. Weight watchers didn't pay me to say that. lol.
In other news we are looking to move out of our present house. Pray for us on finding a home that will suit us.
In home school news we are pretty much done now. I need to put portfolios together. I also have to get all our paper work together for the new school year. I'm excited for the new year. I have some really fun stuff planned for the new year. I have some great stuff on evolution and creation. I found a really neat bible study which will focus on the book of Proverbs.We are also trying a new math curriculum for Justis called The Life Of Fred. I found it at the home school convention. Hope your summer is great.

The weekend ahead.

We have a busy weekend coming up. Saturday is Angel's last day of baseball. They will be having an ice cream party to celebrate the end of the season. After that my niece invited the whole family over for a cook-out. She requested my death by chocolate cake. It' been a while since my family got together like this. It should be fun. Sunday after church they are having an end of the year children's picnic. I have to make something for that too. I hope to have pictures to share if I can find my falling a part camera. I know it's been a while since the last post. May turn out to be a roller coaster ride. I can't post about some of it cause it's to personal. I went to a big home school convention in the beginning of the month. I was inspired and excited for the next school year to come. I had a lovely Mother's day. We went through a time of testing. I did not get the answer I wanted. God knows best. This has made me lean on God harder. It also made me realize I needed to step up and get closer to God. I pulled away some and that is NOT what I wanted or needed to do. I guess testing can be a wake up call from God. I'm back now and hope to post more often. I hope all is well with you and yours.

couples who pray book review

I recieved the book couples who pray from book sneeze. The book is writtne by Squire Rushnell and his wife Louise DuArt. This book takes you through a 40 day prayer challenge. It has celebrity couple's testimony on how prayer has changed thier marriages. My take is this book is very dull and boring. I think this book could suit young married but not older marrieds. I give this book 2 out of 5 stars.

My weekend

My weekend was full of activities. Angel has been preparing for a muscial. Friday we had her final rehersal. Saturday was baseball practice and was the first show. The kids did an amzing job. My mother came along and she was such a proud grandma. Sunday was the second show and Mother's day of course. Angel's Grandma and Grandpa from Delaware came up to see her! She was so excited that they were there. Second show was a success too. We all went to Applebees for lunch. It was really good. I got flowers, cards, drawings, lunch, and after all that my son took me for ice cream! I was treated like a queen for Mother's day. The only part about the weekend I didn't like was my stupid camera. The thing only works half the time lately. It stikll was a great weekend any way. Hope your weekend was a good one.

weight watchers week 9

I had my weight watchers meeting today. We talked about how to handle going out to eat. I've had some funny things happen at weight watchers, I seen a lady from my church, an old high school friend and a woman I worked with over 16 years ago(now I feel old saying that!). It was neat to see these people again. I'm happy to say I last 1.4 pounds for a grand total of 18!!! Hope your having a great day!

Book review- Voyage with the Vikings

I I got this book from Tyndale. Here is what it's about Mr. Whittaker, a kind but mysterious inventor, has sent his cousins Patrick and Beth to Greenland through the Imagination Station. It's the year 1000, and they meet Viking Erik the Red, who is angry about the new God. Mr. Whittaker wants the cousins to find a sunstone, but what does one look like? weight watchers week 8

I went to my meeting today and lost 2.4 pounds this week!!! This plan is so livable. I'm down 16.6 pounds with a lot more to go. I plan on keeping at it. When weather permits I walk my cute doggies as much as I can. They are loving it and I'm getting exercise too!

I know I've been missing from the blog world lately. I've been schooling,cleaning working, and running errands. Easter was nice. I made dinner for 12 people. Everything turned out great. We had tons of leftovers which we've been eating all week. I think we've had our fill now! I'm still doing weight watchers and all is going well so far. My weigh-in day is on Thursdays. I'll keep you posted! I've been playing on their website a lot lately. I've finally caught up on all my blog reading. I also have some book reviews I plan on posting. Yeasterday I had my weight watchers meeting. I lost 1.8 pounds for a total of 11.2 pounds. I got my ten pound ribbon. I was so please to get to this point. I still have a lot of weigh to go. I see it can be done now. I was so proud of myself, I actually exercised five this past week!! That in itself is huge for me. Hope all is well with you. Blessings, Tracy

week 4 weigh in

Today I had my fourth weigh in. I lost 1.2 pounds for a total of 9.4 pounds lost so far! We talked about the importance of exercise and how it is good for us. We talk about differnet things we can do for exercsie. How long we should exercise and how to fit it into our lives. I have been doing wii fit and walking. I love to walk when the weather is nice. I'll probaly being more wii fit this week because we should be getting lots of rain this week.

My sister

Great news my sister Patty went home from the hospital Friday. They said she had a lung disease. She is going to a specialist for out patient treatments. Please continue to pray for her.

My niece got married Saturday. It was a beautiful wedding. What is kind of neat is she was my flower girl at my wedding. The church was so pretty and the food was fabulous. Here are a few pictures of the wedding. Here is my niece with My nephew walking her down the aisle. Her father died when she was an infant.Beautiful wedding cake. It tasted better than it looked! (yes, it was that good!)Angel and the bride.Cute little flower girl.Angel and her daddy dancing!

We had a lovely time. The nice part is my sister Patty got out of the hospital in time to attend!

I know it's been a long time since I last posted. My sister Patty is in the hospital in the ICU. They really don't know what's wrong with her at the moment. She been there for at least 2 weeks. Please pray for her. In weight loss news, I'm learning the program and it's getting easier. The meetings are great. I like meeting people who are in the same boat as I am. I also learn a lot about being healthy. After my first 3 weigh ins, I have lost 8.2 pounds!!! The biggest thing for me right now is getting into a exercise plan. I'm working on it. Cheddar- stuffed burgers

My family loves this recipe. We make oven fries with this and a side salad.
Cheddar-stuffed Buffalo Burgers (I used very lean ground beef)
1 pound ground buffalo meat or ground beef
1 small vidalia onion finely chopped
1 t Worcestershire sauce
1/2 t salt
1/8 t freshly ground pepper
1/2 c shredded reduced-fat sharp cheddar cheese
4 English muffins, split
4 romaine lettuce leaves, trimmed
4 tomato slices
1. In medium bowl, combine the ground beef, onion, Worcestershire sauce, salt and pepper: mix till well combined. Divide and shape mixture into 4 balls. With your finger make a deep indentation into each ball. Fill each hole with 2 T. of cheese . Pinch the meat closed to cover the cheese and shape each ball into a 3/4 inch patty.
2. Toast the English muffins. Spray a nonstick skillet and heat over med.-high heat. Cook burgers 3-4 minutes on each side for medium rare.
3. Place the English muffin bottom on 4 plates. Top each with 1 lettuce leaf, 1 tomato slice and a burger.
This recipe is 7 points on the points plus program. Hope you enjoy!

My first weigh in

Today I had my first official weigh in since starting weight watchers. I lost 4.8 pounds!! I was super pleased with this. At the meeting we talk about what makes us feel deprived like eating out,watching people eat unhealthy foods we like,cravings, boredom, etc. Then we talked about what to do to fight the feeling of being deprived. Some ideas were making sure you had a plan ,read a book, go for a walk, call someone, play on the computer ,eat something you want but watch your portions etc. We were supposed to pick one thing that start the deprived feeling and pick some of the positive behaviors to fight it. I picked boredom. I get this way after I put the kids to bed. I'm so used to snacking then. I'll let you know how it goes next week.

On another note as some of you know I struggle with my weight. I joined weight watchers and was doing good( as long as I went to the meetings). My husband's job changed and then I went to the online program but that didn't work for me. Now I weigh more than I did when I started:(( I decided I can't let this go so I rejoined last Thursday. I will be going to Tuesday meetings. I need to lose about 70 pounds. I'll keep you posted on my progress.

Busy, Busy.

I've been busy spring cleaning. I just rearranged my classroom. I'll post pictures later. We just got a big Dumpster today. We plan on cleaning out the basement,attic and Jason's two story shed. We have such a small house so we need to get rid of junk. We just put carpeting in my son's bedroom too. We like to keep working on remodeling the house. We do what we can as money and time allows . I'm also ready to get my flower beds and veggie gardens going too. I'm so ready for spring!

Misc. 2/28

We've been dealing with illness off and on here lately. Justis still has a cold that just won't go away! We also had problems with our internet provider! They are not the most effecent company. We were without internet for a few days because the messed something up on their side. It took them a while to figure it out, Jason is looking into finding another internet provider. We also went out and bought carpet for Justis' room which Jason is putting in tomorrow. We will be having a busy week. We have something going on everyday till next Monday.(yucky) We have piano,tutor ,going to the library, youth group, co-op,vet visit, cleaning, grocery shopping, choir practice,church, and I work this weekend. Heaven in a pan

Here is a delish dessert. My family loves it. I've taken it to potlucks and got rave reviews! Here it is...
Heaven in a pan
1 cup chopped pecans
1 cup flour
1/2 cup butter
8oz cream cheese
1 cup powdered (confectioners) sugar
1 cup whipped topping
1 small box instant chocolate pudding (4 servings size)
1 small box instant vanilla pudding (4 servings size)
3 cups milk
1 cup whipped topping to cover top of cake
1 chocolate bar (to garnish)

Blend together pecans, flour, and butter.
Layer into a 13 inch pan. Bake at 350 for 25 minutes, let cool. For second layer mix together cream cheese,powdered sugar,and 1 cup whipped topping. Layer gently onto pecan crust. Third layer mix together vanilla and chocolate puddings with 3 cups of milk,layer into pan. Fourth layer add rest of whipped topping and cover with shave chocolate from your candy bar. Chill until ready to serve!! Enjoy!

Spring Co-op Begins!

We have been dealing with everyone being sick around here. I think we are about over it. Praise the Lord! Tomorrow we start our spring co-op. I will be the building supervisor person next year,so I'm in training this spring. We will be there from about 8 a.m. till 4:30. Justis is taking Beginning sign language ,photography, mandolin and first aid. Angel is taking a class called galaxy gazing, paper crafts art class, and cake decorating. Both children will have to take some other school work with them. They will have free time to socialize too:) I'll be teaching a preschool science class called I wonder why???. I had a lot of fun doing it in the fall. I have some great ideas for classes next year too. Does anyone know of a curriculum on how to publish a newspaper?? I think I might offer this for our high school student. Their classes are 32 weeks, so I need something good.

My first book review for Tyndale!

I got my first book from Tyndale publishers.The book is Journey To Riverbend by Henry McLaughlin.

Here is a description of the book

My thoughts

This is a really good read. It has vivid descriptions of what is happening and the scenery. I liked the characters immediately. I liked that the book pointed out God can forgive everyone. Sometimes it's harder to forgive ourselves as the characters of this book learn. It is action packed and keeps your interest the whole way through. The ended does show that another book is probably on the way. I give this 4 out of 5 stars!

Dog Biscuits

I thought this sounded like a fun recipe to try. I'll let you know how the dogs like it.

Dogs Biscuit

2 1/2 c whole wheat flour

1/2 c nonfat powdered milk

1 egg

6 T margarine

1 t sugar

1 tsp salt

1/2 c cold water

3 T powdered beef/chicken bullion

mix and roll out 1/2 inch thick cut out in desire shape. Bake 350 degree oven for 30 min. cool and store in air tight container. Don't give the doggies more than 3 a day!

My weekend

My weekend was eventful. Justis went overnight at a friends house on Friday. Angel and I went grocery shopping . I hate grocery shopping! I had to work Sat. It was horrible getting to work because of an ice storm. It takes me a 30 minutes to get to work normally but it took me an hour. It was a very scary drive. There 3 accident and a lot of car that were on the roadside. I pray the whole time I was driving! Praise God I made it there safely! Of course we had call offs so we were working short and had to pick up extra residents. It went pretty good over all. In the evening we went and visited my mom. I was really tired. Sunday went great at work. We went to my sister's house for the super bowl. I'm sad the steelers lost. Today was a typical Monday expect I feel like I'm getting sick! Hopefully no one else will.

Cheeseburger soup

My family loves this recipe. I found it somewhere on the internet, but I have no idea where. Not a good recipe if your watching your weight though.

Cheeseburger soup
1 1/2 cup water
2 cups cubed peeled potatoes
2 small carrots grated
1 garlic clove,finely minced
1 tablespoon beef bouillon granules or base
1/2 teaspoon salt
1 pound ground beef, cooked and drained
2 1/2 cups milk divided
8 oz process American cheese cubed (I use about 16 oz sliced American cheese:)
1/2 pound bacon cooked and crumbled

1. In large saucepan, combine the first 7 ingredients: bring to boil. Reduce heat:cover and simmer for 15 to 20 minutes.
2. Stir in cooked beef and 2 cups milk : heat though
3. Combine flour and remaining milk until smooth: gradually stir into soup. Bring to a boil: cook and stir for 2 minutes or until thickened and bubbly. Reduce heat: stir in cheese until melted. Top soup with crumbled bacon just before serving.

We got about 1o inches of snow last night! The kids are loving it. The puppies like it too. We had a few small storms before this one too. I've had enough of snow this year already. I decided to try a new chili recipe this week. My family loved it. My daughter even ate it which is saying something!! I got it from allrecipes.com.

Anytime chili
1 pound ground beef. (I used venison.)
3 8oz cans of tomato sauce
1 cup canned chili without the beans
1 15 oz can pinto beans, drained and rinsed.
1 15oz can kidney beans, drained and rinsed
1 6 oz can tomato paste
I used these seasonings to taste onion,garlic and chili powder.
Brown ground beef. in med-high skillet and drain,
Add sauce, kidney beans, pinto beans, chili, and paste. Stir until well blended.
Heat over medium heat for 15 minute or until heated thoroughly. stir occasionally.
I serve it with corn bread. Kids and hubby put cheese on top.
Enjoy!

I've been hungry for these brownies. I thought I'd share the recipe with you. My family loves them.

Brownies
1c brown sugar
1 c sugar
3/4 c coca
2 1/4c flour
1 tsp. baking powder
1/4 c chocolate chips or nuts (optional)
3/4 c oil
2 tsp vanilla
4 eggs
Mix oil ,vanilla, eggs beat until smooth then add to rest of ingredients. Spread in a greased 13 by 9 inch pan and bake at 350 for 25 to 30 minutes.

work changes

The new year has started some adventures for our family. I went part time at the nursing home I work at. I got on the dementia and Alzheimer's unit! I love working with them. I will work every other weekend and one day a week. Jason will have to do schooling the day I work. Jason is planning on starting college in the fall, so I have to help with the finances. I took the job now because opening don't come to often where I work. We definitely will have to make some adjustments. Please pray for us as we adjust to me working and Jason starting school.

We had one family come and pick up their puppy. It was one of our males. His name is now Tracker. He belongs to a good friend of mine. This family has 5 children. He is sure to get plenty of playtime and love!!

New Year

I hope all of you had a wonderful New Year. I worked yesterday and it was a very busy day. A good one over all. I came home and we just hung out as family. Of course we had pork ,sauerkraut and mashed potatoes. We played games and watched a movie.
Today we went to church. We had communion. It was a lovely service and pointed out what should be the focus of our new year. It was Jesus of course! The rest of our day is hanging out as a family. We talked to the kids about the new year and what to expect. We looked at the rules, talked about the rest of the school year and looked at our new family devotional. I enjoyed the discussion and everyone's input. Tomorrow we get back to our normal routine.

We had a lovely Christmas. Christmas eve was family time. We had a nice dinner,went to church and ate birthday cake. Christmas day we opened gifts and relaxed. My mom came over for Christmas dinner. In the evening we went to my side of the family. We usually have a buffet. It was a great time of fellowship. Sunday we went to church and got together with my hubby's side of the family. It was nice since we don't see them often. After that my in-laws came to our house to exchange gifts. Over all it was a very nice Christmas. Hope you had a nice Christmas too. I finally finished most of my Christmas shopping except for stocking stuffers and two gifts!!! I really need to stop the last minute shopping. The stores are so full. I try to smile at everyone and be gracious. I hope people notice it and see Jesus. Maybe they think I'm a crazy woman. lol! Tomorrow and Friday morning plans are cleaning, laundry and food preparations!

I got a early Christmas present PINK EYE! I can't believe it. I had to go to the doctor today. He said I shouldn't be contagious for Christmas. I keep getting sick around the hoildays. The doctor said see you at Easter ! Not funny but he thought it was!

Busy Weekend lots of fun!

This past weekend was so busy. Friday my in-laws from Delaware came up. We went out to dinner and then we went to Hershey Pa to see the lights. It was lovely. The kids really enjoyed it and want to go again. After that we went for ice cream. I know it's cold out but my family is addicted to ice cream!! Saturday Angel and Justis had rehearsal for the Christmas musical they did on Sunday. I stayed home to clean and bake. We had family over in the evening for cookies and hot cocoa. It was a nice little get together. Sunday the kids had their musical it went great! Justis helped with the lighting. Angel sang and had some small speaking parts. My mother -in -law and father- in -law got to see it. That made the kids really happy. We went to lunch with the in-laws. We really enjoy our time with them because we don't get to see them as much as we like. Here is a picture of Angel and the rest of the children's choir! Angel is the tall girl in the back wearing white. She played an Angel in the paly. Everyone got a kick out of that!

Yesterday my niece and her daughter came over for a cookie baking day. We had a great time baking and listening to Christmas music. Here are a few pictures of our day! This is my niece Heather and her daughter Brianna.Here is Brianna mixing cookies. My great-grandmother's recipe.Peanut butter blossom cookies. These are a huge hit at my house.Here are oatmeal raisin cookies. I always think of my dad when I make these. When he was sick with cancer these cookies are one of the few things he would eat. I made many batches of these cookies for him. I was glad to bring him a little enjoyment as he was dying. A bitter sweet memory. Sorry for the sad tone all the sudden.

We also made chocolate chip cookies, and fruit filled cookies too. Have a Blessed weekend.

Christmas carols

Sunday evening our church had their annual Christmas carol sing. It was so fun. Angel is in the children's choir and bell choir. They performed three songs total. I was going to post a video of it but I can't get my computer to upload it! I'm so annoyed with the computer right now. I was so focused on the video, I didn't get any pictures. It was an adorable performance. The church provided a meal and we got to fellowship with our church family. It was a lovely evening.

We got out our Christmas decorations of the attic and started decorating for Christmas. Christmas stockings are hung, nativity is set out, and the tree is now up! Thanksgiving celebration

We had a lovely Thanksgiving Celebration with our relatives in Delaware. We had a lot of time just hanging out with each other. The meal was wonderful! My mother -in-law put out all the traditional recipes we look forward to. The drive to Delaware was easy as could be with hardly no traffic. Hope you enjoyed your Hoilday with your loved ones too!

We are still getiing over our sickness. I called my mother-in-law about it and she said to still come down! Tomorrow we will hit the road for Delaware. We will get to spend a hoilday with Jason's brother the first time in about 2 or 3 years. We are really excited about that. I feel a bit better but I'm still getting over my sinus infection. Angel started getting it but I called the Doc. and get her on medicine right away. I figure we can't mess around with it. I'm sick just in time for the Holiday! Last night it hit me like a ton of bricks. I seem to be fond of getting sinus infections. I will be calling the doctor first thing this morning. I hope he will give me some strong medicine to knock it out of me. Then I have to make a ton of calls cancelling appointments. Tuesday is a busy day for us! I 'm worried because we are suppose to got to my in-laws for Thanksgiving. Jason's brother is suppose to be there. We haven't got to spend a Holiday with him in a couple of years. Please pray that I get well and we are able to continue on with our plans.

Puppies are Here!!

Emily had her puppies. She went in labor on Friday about 9 am and finished about 4:30 am Saturday. She had six puppies 4 girls and 2 boys. Unfortunately one died Sunday:( We all were a mess about that. The puppies are SO cute! We are allowing Justis to keep one of the girls but he can't decide on which one yet. We also have three potential families interested in a puppy! Here are a couple puppy pictures!!! I'm sure I'll post more as they grow!.Blessings,

Thank you for the prayers. Cate is fine. She had stayed in the hospital overnight and they flushed her system out. We had thought she took a lot of pills. The parents figured out she got a hold of three. It could have been a lot worse. Thank God it wasn't.

Graham cracker pudding

Since the holidays are coming up I thought I'd share a recipe that is always on the holiday menu.

Graham Cracker pudding

2 large packages of instant vanilla pudding

4 or 5 bananas

1 1/2 sleeves of graham crackers

1 1/2 of the small whipped cream containers

Prepare the pudding according to package directions. While pudding is setting cut up banana into small slices. Crush graham crackers. After pudding is set mix all ingredients including the whipped cream. Keep in frig. till ready to serve and then enjoy!!!

I go grocery shopping on Fridays so, here is my menu for the next week. We make our big meal for lunch since my hubby works 2nd shift.

Lunches

barbecue chicken, baked potatoes, veggie
sausage stew
ham, potatoes and green beans
meatloaf, mashed potatoes, and corn
corn pie
pork chops, mashed potatoes, veggie
Spaghetti

Dinners

pigs in a blanket
frozen pizza
fried rice
sandwiches
breakfast for supper
grilled cheese and tomato soup
chicken strips and fries

We had a very busy weekend. Friday I had my nieces come over for a visit. Saturday Angel's one co-op class put on a country fair! It was awesome!! They had food, games, hayrides, barrel train rides, horse back riding, and a petting zoo. That took up our Sat. till about 6p.m. Then we went out to eat and took Angel trick or treating. See my labels to know why we do Halloween. After all that I had to stop by wal-mart. Exhausting Saturday! Sunday we had church. Angel is part of the children's choir and sang a solo. She did a great job!!!! I need to get a camera!! I going crazy without my camera! Monday we chilled out! Tuesday is a run day. We went to the library, store, took Justis to youth group, and Angel to piano. Tomorrow is co-op day, piano and grocery shopping. That a peak at my life.

My menu plan for the week 10/25/10

I decided to post my menus for the week. I hope it will give you ideas and give me inspiration. lol. I make my big meals at lunch because my hubby works 3pm to 11pm. Breakfast is usually cereal,bagel,oatmeal, pancakes and occ. eggs.

Tuesday- Lunch - roast beef,mashed potatoes, gravy and a veggie

Dinner- noodle soup and muffins

Wednesday- Lunch- breaded fish, rice,and veggies

Dinner- mircowaveables

Thursday (co-op) - Lunch- sandwiches

Dinner- grilled chicken, parmesan potatoes and veggies

Friday- Lunch- Homemade noodles soup and fried potatoes (pa dutch meal)

Dinner- Homemade pizzas

Saturday- Lunch-hot dogs, sauerkraut and mashed potatoes

Dinner- chocolate chip pancakes

Sunday- Lunch- Baked potato bar (cheese, broccoli,bacon bits,chili)

Dinner- encore chicken parmesan meal and noodles

That's this week menus, I really struggle with what to make for us when my hubby is working. Suggestions welcome!

Creamy Baked Chicken

I thought I would share this recipe. It is a family favorite.
Creamy Baked Chicken
4 boneless, skinless chicken breast
8 slice American cheese
2 cans cream of chicken soup
1/4 c water
1 box chicken flavored stove top stuffing
1/4 c margarine, melted
Cut chicken breast in half (you will have 8 pieces). Place chicken in baking dish. Top with cheese slices. Combine cream of chicken soup with 1/4 c water. Pour over chicken. Sprinkle stuffing over the top of chicken and soup mixture. Drizzle melted margarine on top. Cover with foil and bake at 350 for 1 hour. If you like the stuffing to be crucnhy, remove the foil the last 15 min. of baking.

The Science Factory

We went on a field trip to The Science Factory in Lancaster PA. It was awesome. They had many fun experiments to learn just about anything that relates to science. They had an earthquake experiment. The kids built houses and then had to figure out how strong of an earthquake it would take to knock it down. They had some experiments that dealt with pendulums, light, sound, and optical illusions. It cost 7.50 for adult and 6.00 for kids. It was well worth the cost. Here is thier website http://www.lancastersciencefactory.org/ I would highly recommend it if you can get to the Lancaster area.

Bread and butter pickles

Since I've be freezing and canning, I thought I'd share a recipe with you. My family loves these pickles! The recipe came from my mother-in-law Kathy.

Bread and Butter Pickles
13 cucumbers
2 onions
4 Tablespoons salt.
Slice up onions and cucumbers thinly. Mix in salt let sit two hours
Then in a large pot mix 4 cups vinegar, 4 cups water, 6 cups sugar, 2 Tablespoon celery seeds and 2 Tablespoons Mustard seeds. Bring to boil. Then add cucumbers and onions. Bring that to a boil. Fill canning jars while mixture is boiling seal lids. Make sure you have a tight seal!!
makes 8 to 12 pints.

tidbits of the last week

Last week was busy with cleaning, schooling and other stuff. On the school front we had some frustrations with one of Justis' co-op classes. He is taking sign language it will count for a high school credit. The book gave descriptions of the signs. The descriptions confused me. Justis' first test for the class was a 52%! Not good but I understood how it happened. I found out about a video that goes with his book and ordered it cost 57.00 dollars. I already spent 215 dollars on it! YUCKY! We got it today. We watched it twice and I see hope for this class now. Justis will have to watch it a lot more cause, he has a test on Thursday!!! Prayers would be appreciated. Justis need to do well to build up his confidence.

I canned about 8 quarts of bread and butter pickles. I have another batch to go. I'm still getting tomatoes and I'm making spaghetti sauce with them. I plan on getting apples to makes sauce and pie fillings to freeze for winter. I also want to get neck pumpkins so, I can freeze pumpkin for pies and bread. My hubby loves pumpkin bread!

Friday morning was really hard. My mother has a mini dachshund. The dog was getting really vicious and was biting my mother. She also bit other people. My mom asked my to take her to the vet so, she could be put to sleep! I did it for her because she wouldn't be able to. It was so hard. I felt horrible. I don't want to ever go through that again. I love animals so much. I wish we could have done more.

I watched my great-niece Brianna on Friday and had tons of fun. We even made homemade play dough it was a huge hit!

Saturday I worked . In the evening, I had to run the kids around. Justis had a youth group activity. It went to 10pm. By the time I got the kids to bed, I was exhausted!

Sunday was church in the morning. Angel is a member of children's choir and bell choir. They performed during worship service. The kids did great. They are so fun to watch.

That brings us to today. We cleaned some and did a little school. I should have done more of both. We then went to my mothers so, Jason could work on her car. We also ate dinner and spent most of the evening there. Wow! I think that brings me up to date!
